    Cumin Zucchini Salad with Pinto Beans and Roasted Red Peppers

    Fresh and filling, this Cumin Zucchini Salad with Pinto Beans and Roasted Red Peppers is a great choice for a healthy meal. Zesty zucchini seasoned with cumin, hearty pinto beans, and sweet roasted red peppers make a great flavor combination. You can add feta cheese and cilantro on top if you want to add more freshness and creaminess. You can make it for lunch or dinner quickly and easily.

    Ingredients:

    • 2 medium zucchinis, thinly sliced

    • 1 can 15 oz pinto beans, drained and rinsed

    • 2 roasted red peppers, sliced

    • 1 teaspoon ground cumin

    • 2 tablespoons olive oil

    • 2 tablespoons fresh lemon juice

    • Salt and pepper to taste

    • 1/4 cup chopped fresh cilantro

    • 1/4 cup crumbled feta cheese optional

    • Mixed greens for serving

    Instructions:

    In a large salad bowl, combine the thinly sliced zucchinis, pinto beans, and roasted red peppers


    In a small bowl, whisk together the ground cumin, olive oil, fresh lemon juice, salt, and pepper


    Pour the cumin dressing over the zucchini, beans, and peppers


    Toss gently to coat all the ingredients with the dressing


    Let the salad marinate for at least 15 minutes to allow the flavors to meld


    Just before serving, sprinkle the chopped cilantro and crumbled feta cheese if using over the salad


    Serve the cumin zucchini salad on a bed of mixed greens
